Galouti Kebab

Galouti means something that melts in the mouth; tradition says the royal cooks of Awadh made it soft enough for an ageing Nawab who had lost his teeth.
Very finely minced meat mixed with a long list of spices, shaped into patties and fried in ghee, sold from Lucknow kebab counters with a flaky paratha.
Why it's made this way: It is a dish of Awadhi cuisine and is strongly identified with Lucknow, the old capital of the Nawabs of Awadh.
