It is a hot chaat: tomatoes are cooked down on an iron griddle with potato and spices, then finished with ghee, a sugar syrup and crushed namak para or sev on top.

A warm, sweet-sour-spicy mash of tomato and potato topped with chaat masala, coriander and a squeeze of lemon, served in a kulhad at Varanasi chaat stalls.

Why it's made this way: It is a chaat found almost only in Varanasi, where old chaat shops around Godowlia and Dashashwamedh Road are known for it.
