It's made from just milk, sugar, butter, and pistachio, cooked down slowly for hours with no flour at all, yet it sets into a fudge firm enough to slice.

Milk and sugar are simmered for hours with butter until thick and caramelized, then folded with ground pistachio and a touch of vanilla and set into a shallow tray to firm up before being cut into small pieces. Tabriz's historic bazaar confectioners have sold it for generations.

Why it's made this way: Tabriz's bazaar — one of the oldest covered markets in the Middle East and a UNESCO World Heritage Site — built part of its reputation on milk-based sweets like eris, made by confectioners whose shops have operated there for generations.
