The dough is baked directly under a bed of hot sand and glowing embers, then simply whacked clean of grit once it comes out — no oven involved at any point.

A round of flatbread dough is buried beneath the hot sand and dying embers of an open fire and left to bake in the residual heat, the same technique locally used to cook whole potatoes and eggs. Ghadames' Tuareg-descended community calls the finished loaf malla.

Why it's made this way: Ghadames sits on an ancient Saharan caravan route where wood and ovens were scarce but heat and sand were not, so Tuareg cooks turned the desert itself into their oven — a technique still practiced in the oasis today.
