Lamb dominates Libyan cooking so thoroughly that it's the default meat on nearly every street-stall skewer, not just a specialty option.

Cubes of marinated lamb are threaded onto skewers and grilled over hot coals at street stalls around Tripoli's Old Medina, Al Dahra, and Al Andalus districts, then served with flatbread. Vendors grill them to order over open flame.

Why it's made this way: Lamb is the most widely eaten meat in Libya, and grilling it on skewers over coals turned a staple ingredient into one of the fastest, most portable meals street vendors could serve to passersby.
