Tamr (Fezzan Dates)

Libyans traditionally break the Ramadan fast with dates, and the thick date syrup called rub is the standard partner for asida across the country.

The oases of the Fezzan around Sabha produce many of Libya's dates, sold piled high in markets fresh, semi-dried and fully dried, and eaten plain, stuffed with almonds, or reduced into date syrup used throughout Libyan cooking.

Why it's made this way: Date palms are the backbone of the Fezzan's oasis farming, and dates anchor everyday hospitality across Libya: a plate of dates is the customary way to welcome a guest.
