Instead of the usual lamb or chicken, the steamed semolina here sits over a stew built entirely from the day's fish catch.

Fine semolina couscous is steamed over a simmering pot of tomato-based fish stew — often made with shark-like kalb el bahr or other local Mediterranean catch — and served together with the broth spooned over the grain.

Why it's made this way: As a working fishing port, Misrata puts its own coastal spin on Libya's national grain dish, swapping the usual meat for fish landed the same day.
