The diamond-shaped cookies are dropped into hot syrup the moment they come out of the fryer, so the coating seals in while the semolina shell is still warm and porous.

A stiff semolina dough is rolled around a sweet date paste, cut into diamonds, fried or baked until golden, then dipped in honey or sugar syrup while still hot. Misrata's abundant, high-quality dates make it a natural home for this classic Maghreb sweet.
