Cross into eastern Libya and the same idea gets a different name and coating — locals there call it batat mbatna and fry it crisp instead of simmering it in sauce.

Thick potato rounds are hollowed and sandwiched around a filling of minced meat, parsley and Libyan spices, then dipped in egg and flour before being pan-fried and finished in a light tomato sauce — a hearty appetizer sold at Tripoli's casual eateries.

Why it's made this way: Mbatten shows how the same core recipe splits by region in Libya: the western 'Mbatten' style favors a saucier finish, while the eastern version is deep-fried — a small but telling marker of Tripolitania's distinct home-cooking habits.
