It's built from a mix of rice, chopped liver and heart stuffed into cleaned sheep intestine — Libya's answer to haggis.

Sheep intestines are cleaned and stuffed with a seasoned filling of rice, minced lamb, chopped liver and heart, dried mint, parsley, dill and warming spices like turmeric and cinnamon, then tied off and simmered until firm enough to slice.

Why it's made this way: Usban is a special-occasion dish across Tripoli's households, served alongside rice or couscous at weddings, Eid gatherings and family celebrations — a way of using every part of the animal that is still a point of culinary pride.
