It swaps out the sweet cinnamon-and-sugar topping of Fez's original for a more restrained cumin-and-turmeric filling, making it one of the few pastilla versions that isn't dusted in sugar.

Shrimp, squid, and white fish are bound with vermicelli noodles and warm spices, then wrapped in the same thin warqa pastry used for Fez's classic meat pastilla and fried or baked until crisp. Restaurants and stalls near Essaouira's medina and port serve it as the city's signature reinterpretation of the inland original.

Why it's made this way: As a fishing town reworking an inland Fez classic with its own daily catch, Essaouira turned pastilla into a showcase for its seafood rather than its poultry.
