It swaps the sweet cinnamon-and-sugar topping of Fez's original for a savory chermoula filling of garlic, cumin, paprika and herbs, so it skips the sugar dusting entirely.

Shrimp, squid, and white fish are bound with vermicelli noodles and chermoula spices, then wrapped in the same thin warqa pastry used for Fez's classic meat pastilla and baked until crisp. Restaurants and stalls near Essaouira's medina and port serve it as a coastal take on the inland original.

Why it's made this way: As a fishing town reworking an inland Fez classic with its own daily catch, Essaouira turned pastilla into a showcase for its seafood rather than its poultry.
