You choose the fish yourself, straight from the display of the morning's catch, before it's carried a few steps to a charcoal grill and cooked while you wait.

Small grill stalls line the entrance to Essaouira's working fishing port, cooking whatever came in that morning — sardines, sea bream, sole, prawns — over charcoal and serving it simply with fresh bread and a salad. It's one of the most direct boat-to-plate meals in Moroccan street food.

Why it's made this way: Essaouira's identity has always been built around its Atlantic fishing fleet, and grilling the catch right at the port keeps the city's most iconic meal exactly as immediate as the industry it comes from.
