It's cheap enough that a bowl can cost just a few dirhams, yet stalls that serve it well can build a loyal breakfast crowd that lines up before sunrise.

Dried fava beans are simmered until soft, then blended into a thick, pale-green soup and ladled into bowls topped with a swirl of olive oil, cumin, paprika, and sometimes chili oil. Vendors set up folding tables and stools right on the street, serving it with bread for dunking.

Why it's made this way: As a filling, low-cost dish that warms diners up fast, bissara became Fez's default cold-weather breakfast, sold from the same corner stalls for generations.
