Chebakia

Each piece is hand-shaped into a flower-like rosette before frying, then dunked hot into warm honey so the syrup soaks all the way through while it's still fresh from the oil.

Strips of sesame-and-anise-spiced dough are folded or rolled into a flower shape, deep-fried until crisp, then dipped in warm honey syrup scented with orange blossom water and coated in toasted sesame seeds. Fez pastry stalls stock trays of it especially in the run-up to Ramadan.

Why it's made this way: Its dense sweetness makes it the classic partner to harira soup for breaking the Ramadan fast, and Fez households and vendors alike fry it in huge batches at the start of the holy month.
