Recipes can call for more than fifteen different spices and herbs in the broth alone, including licorice root, lavender, and aniseed.

Snails are simmered for hours in a broth built from a long list of spices and herbs, then ladled from steaming cauldrons into small bowls. Diners pick out the snails with a toothpick and finish by sipping the peppery, aromatic broth straight from the bowl.

Why it's made this way: Sold from carts across Jemaa el-Fnaa and the medina's side streets since long before the square was a tourist draw, babbouche remains a favorite late-night snack for Marrakchis heading home.
