A whole cluster of stalls along Rue Bani Marine, just outside the medina walls, does nothing but fry these fritters to order all day long.

Mashed potato is mixed with garlic, parsley, and cumin, formed into small discs, and deep-fried until the outside turns golden and crisp. Vendors usually tuck two or three into a split baguette with harissa for a fast, cheap lunch on the move.

Why it's made this way: As a Maghreb-wide fritter that Marrakech street stalls turned into a full sandwich meal, maakouda became one of the city's go-to grab-and-go lunches for workers and students alike.
