Maakouda is one of the cheapest meals in the medina — a fritter sandwich often costs less than a glass of fresh orange juice on Jemaa el-Fnaa.

Mashed potato is mixed with garlic, parsley, and cumin, formed into small discs, and deep-fried until the outside turns golden and crisp. Vendors usually tuck two or three into a split baguette with harissa for a fast, cheap lunch on the move.

Why it's made this way: As a Maghreb-wide fritter that Marrakech street stalls turned into a full sandwich meal, maakouda became one of the city's go-to grab-and-go lunches for workers and students alike.
