Tangier sits at the exact point where the Atlantic meets the Mediterranean, so the squid frying in its stalls can come from either sea depending on the season and the catch.

Fresh squid rings are lightly dusted in flour, deep-fried until golden, and served hot with a wedge of lemon. Seafront stalls and small restaurants around Tangier's port sell it as a fast, simple snack alongside the day's other fresh catch.

Why it's made this way: The dish mirrors the fried calamari found just across the strait in Andalusia, another everyday marker of how closely northern Morocco's seafood cooking tracks with southern Spain's.
