Churros

Churros — street food from Tangier & the North, Morocco

In Tangier and Tetouan, churros are treated the Spanish way — a breakfast food dipped in thick hot chocolate at a café counter, not a fairground dessert.

Ridged sticks of dough are piped straight into hot oil, fried until crisp, and often sprinkled with sugar. Cafés across Tangier and Tetouan sell them fresh in the morning, usually alongside a cup of thick drinking chocolate for dunking.

Why it's made this way: Churros arrived with the same wave of Spanish and Andalusian influence that shaped the rest of northern Morocco's café culture, and they remain one of the clearest signs of that legacy on a breakfast table.
