In Tangier and Tetouan, churros are treated the Spanish way — a breakfast food eaten at a café counter first thing in the morning, not a fairground dessert.

Ridged sticks of dough are piped straight into hot oil, fried until crisp, and often sprinkled with sugar. Cafés and morning stands across Tangier and Tetouan sell them fresh, usually alongside coffee or hot chocolate.

Why it's made this way: Churros arrived with the same wave of Spanish and Andalusian influence that shaped the rest of northern Morocco's café culture, and they remain one of the clearest signs of that legacy on a breakfast table.
