It's essentially the same dish as calentita, the national dish of Gibraltar just across the Strait — proof of how closely the food cultures on both sides of the water are linked.
A batter of chickpea flour, water, and olive oil is baked in a wide pan until it sets into a dense, custard-like square, then sliced and sold warm from street carts, sometimes dusted with cumin. It's a common quick breakfast or snack in Tangier and along the northern coast.
