The word "kapana" comes from Oshiwambo for "to fry" or "to grill" — the cooking method literally became the dish's name.
Kapana is beef grilled fast over open coals, sliced into bite-size strips, and served with chopped onion, tomato, and a fiery chili sauce. It's the centerpiece of Windhoek's Oshetu Market (Single Quarters) in Katutura, where rows of grill masters cook meat to order in full view of the crowd.
Why it's made this way: Urban migration brought rural grilling traditions into Windhoek's townships, and open-air kapana stalls became an affordable, communal way to eat meat daily rather than saving it for special occasions.
