The dish is made purely from peeled white beans soaked and simmered for hours until they collapse into a puree — no meat, oil or spice needed to make it a filling meal on its own.

Dried white beans are soaked overnight, boiled until soft, then mashed or blended into a smooth, creamy puree that's eaten as a side or a light meal in its own right.

Why it's made this way: Shared with neighbouring Kavango communities, oshigali is a simple, protein-rich staple that stretches a harvest of beans into filling meals across Namibia's northern floodplain regions.
