Oshiwambo Chicken with Odjove — street food from Ovamboland, Namibia

Odjove, the golden oil pressed from marula kernels, is worked into the chicken before cooking — the same fruit that provides the season's marula wine also seasons the season's meat.

Chicken pieces are marinated in a blend of chili, garlic and ginger, then basted with odjove (cold-pressed marula kernel oil) while grilling, giving the skin a nutty, richly savoury finish.

Why it's made this way: Marula trees grow throughout Ovamboland, and Aawambo cooks use nearly every part of the fruit — flesh for the wine, kernels for oil — so it's no surprise the oil ended up seasoning the region's favourite grilled chicken too.
