Zambezi Bream

The Zambezi region is home to roughly 80 different freshwater fish species, but it's the plentiful, easy-to-net tilapia-type bream that ends up on the most dinner plates.

Freshwater bream netted straight from the Zambezi and Chobe rivers is marinated in local spices and herbs, then grilled whole over an open fire until the skin chars, traditionally served with maize pap and steamed spinach.

Why it's made this way: In a landlocked strip framed by four rivers, fish rather than beef has always been the everyday protein for Zambezi region communities, and bream from the river is the most common catch sold at Katima Mulilo's riverside market.
