Mahangu Pap with Muriwo

Even though maize grows well across the Zambezi floodplain, many households still prefer pearl millet (mahangu) pap for its heartier bite and its resistance to the region's unpredictable rains.

A stiff, smooth porridge of pounded pearl millet and maize meal is served alongside muriwo — river spinach or wild greens stewed down with onion and a little oil — and often a portion of grilled bream on the side.

Why it's made this way: Straddling the floodplains of four rivers, the Zambezi region grows both millet and maize, and this simple pap-and-greens plate remains the daily anchor of meals from Katima Mulilo to the smaller riverside villages.
