The vundu is the largest fully freshwater fish in southern Africa — specimens have been landed at over 150cm long and 55kg, enough from a single catch to feed an entire riverside village.
Chunks of the giant air-breathing vundu catfish are simmered in a pot with onion, tomato and chili until the flesh turns soft and flaky, then spooned over pap or rice.
Why it's made this way: The Zambezi and its tributaries are among the few southern African waters big enough to hold vundu, and landing one is still treated as a local event, with the catch shared and cooked up fresh at the riverbank.
