Despite the name, the glaze has traditionally been pink, colored with beet juice; Frisian bakers have begun switching to orange icing to stop confusing visitors.

A lightly spiced cake filled with almond paste and candied orange peel is baked on a pastry base, topped with a bright pink sugar glaze, and sold sliced from Frisian bakeries and market stalls. The pink icing is the giveaway that marks it out from other Dutch cakes.

Why it's made this way: It's named for the candied orange peel in its filling, and Frisian bakers kept it alive as a distinctly local specialty.
