It's a sausage with no casing and a meat blend nobody advertises — Dutch snack bars have never had to say exactly what's inside.

A deep-fried, skinless minced-meat sausage sold at Dutch snack bars (cafetarias) and street stands, usually served "speciaal" — split open and topped with mayonnaise, curry ketchup and chopped raw onion.

Why it's made this way: It emerged in the mid-20th century as a cheap, mass-producible snack designed to fry from frozen in minutes for the Netherlands' walk-up snack-bar culture.
