They're cooked in a special cast-iron pan with dozens of small dimples, so each poffertje is flipped individually with a tiny two-pronged fork.

A yeasted, buckwheat-leavened batter is poured into a dimpled pan, cooked into small puffy discs, and piled onto a plate with a heap of melting butter and powdered sugar. Market squares and fairs across Noord-Holland set up poffertjes stalls where the batter is cooked fresh to order.

Why it's made this way: The tiny format let cooks turn a simple pancake batter into a fast, sociable fairground food that could be served to a crowd in minutes.
