These spears are grown entirely underground and harvested before they ever see daylight — that's the only reason they stay white instead of turning green.

White asparagus is hand-harvested from mounded soil each spring, then sold from roadside stalls and market tables across Limburg, often peeled and bundled on the spot, ready to be simply boiled and served with butter, egg and ham. The whole province leans into the short spring season with dedicated asparagus menus and stalls.

Why it's made this way: Limburg's sandy soil is especially suited to growing asparagus, and the province turned a seasonal specialty crop into a genuine springtime food event.
