Locals insist the only way to eat one without wearing it is upside down, using the hard chocolate shell on top as a plate for your fingers.

A choux pastry ball roughly the size of a fist is filled generously with whipped cream and coated almost entirely in dark chocolate fondant. Bakeries in 's-Hertogenbosch (Den Bosch) have sold them for around a century, and they've become the city's signature sweet.

Why it's made this way: Competing bakers in Den Bosch developed and refined the recipe in the early 20th century, and the pastry became a point of local civic pride.
