The name is an acronym stitched from three cooking methods at once — SUgba (grilled), TUwa (soup), and KILaw (vinegar-cured raw) — so ordering 'sutukil' means getting the same fresh catch three different ways.

Fresh fish or shellfish picked straight from a Mactan market stall gets divided three ways on the spot: part grilled over charcoal, part simmered into a light soup, and part cured raw in vinegar and chili. All three arrive together on one table built for sharing.

Why it's made this way: Mactan Island's cluster of seaside market-and-grill setups made it possible to buy fish straight from the source and have it cooked to order within minutes, turning the format into a distinctly Cebuano way of eating seafood.
