The name itself is a fusion — sinugba (grilled) plus kinilaw (vinegar-cured raw) mashed into one word for a dish that serves both cooking styles in the same bowl.

Charcoal-grilled pork belly is tossed together with vinegar-and-citrus-cured raw tuna, onion, and chili, mixing smoky charred meat with sharp, cold acidity in every bite. Street stalls across Mindanao's coastal cities serve it as a shareable starter alongside cold drinks.

Why it's made this way: The dish grew directly out of Mindanao's kinilaw tradition, pairing it with grilled pork to give the acidic raw fish a smoky, fattier counterpart, a combination now considered distinctly Mindanaoan.
