Cooks stuff the whole frog with a seasoned pork filling before frying it — legs, skin, and all — so the finished dish looks intact until it's cut open.

Whole rice-field frogs are deboned and packed with a seasoned ground-pork or shrimp filling, then deep-fried until the skin crisps around the stuffing. Towns across Pampanga serve it as a specialty appetizer, and San Fernando even hosts an annual Frog Festival built around it.

Why it's made this way: Frogs proliferate in Pampanga's rice paddies alongside camaru, and Kapampangan cooks turned another abundant local ingredient into a distinctive regional delicacy rarely found outside the province.
