Palusami parcels are sealed shut using nothing but layered taro leaves — no foil, no string — yet they hold a rich, creamy coconut filling together perfectly through cooking.

Palusami is young taro leaves filled with coconut cream, onion and sometimes tinned meat, wrapped into parcels and baked or cooked in an umu until the leaves soften and the coconut cream thickens inside.

Why it's made this way: Wrapping food in taro leaves let cooks contain and steam rich fillings inside an earth oven without any pots, while the leaves themselves become edible once fully cooked.
