Leskovac has run an annual grilling festival, Roštiljijada, every September since 1989, and it now draws crowds in the hundreds of thousands to a city of around 60,000 people.

Small hand-rolled logs of seasoned minced beef and pork are grilled over hot coals until charred outside and juicy within, then served in flatbread with raw onion and ajvar. Grill stands line Leskovac's streets and light up en masse during its September festival.

Why it's made this way: Leskovac sits in a heavy grilling and livestock-trading region, and its ćevapi earned a reputation sharp enough that the city now markets itself as Serbia's grilling capital.
