Pirotska Peglana Kobasica

Its name means 'ironed sausage' — literally, because it's flattened by hand and pressed under weighted planks as it dries, and the recipe uses no pork at all, only beef, sheep, and goat.

Lean beef, goat, and sheep meat is seasoned, stuffed into casings, then repeatedly pressed flat under weights as it air-dries, giving it a distinctive ribbon-like shape. It's sold at Pirot's markets and at the town's dedicated sausage fair held every January.

Why it's made this way: Pirot's shepherding traditions favored beef and goat over pork, and pressing the sausage flat sped up drying in the mountain climate; it earned official geographical-origin protection in 2022, alongside Pirot's carpet and cheese.
