This wine's name is a shortened form of 'Prokupačko crno' — literally 'black wine of Prokuplje' — a grape so tied to one southern Serbian town that it eventually took the town's name entirely.
Prokupac is a medium-bodied red wine with juicy red-berry fruit, bright acidity, and soft tannins, made from Serbia's oldest documented indigenous grape variety. It's grown across the Toplica and Nišava valleys of southern Serbia, historically the house wine of taverns in Niš and Vranje.
Why it's made this way: Southern Serbia around Prokuplje and Niš has grown this grape for at least seven centuries, making Prokupac the one wine most specifically rooted in the region rather than imported from elsewhere in the Balkans.
