At Šumadija's village fairs, this bean stew is cooked in cauldrons big enough to feed an entire wedding party in one go.
Dried beans are slow-cooked with smoked pork ribs or bacon, onion, and paprika until thick and stew-like. Vendors ladle it from big kettles at outdoor fairs (vašari) and roadside inns across the Šumadija hills.
Why it's made this way: Šumadija's rolling hills were historically smallholder pig- and bean-farming country, and a cauldron of pasulj was the cheapest way to feed a crowd at weddings, markets, and festivals.
