The crunchy bits folded into this cornbread are pork cracklings left over from rendering lard — nothing from a Šumadija farmhouse pig-slaughter went to waste.

Cornmeal batter is mixed with crispy pork cracklings (čvarci) and baked into a dense, savory bread, then cut into squares. It's sold warm at roadside grills and farm stands throughout central Serbia.

Why it's made this way: Corn was the staple grain of Šumadija's peasant kitchens, and mixing in cracklings from home pig-slaughters turned a plain bread into a filling, portable meal.
