During the Guča trumpet festival, rows of whole piglets and lambs turn slowly on spits along the main street — the smell of roasting pork is as much a symbol of the event as the brass bands.
A whole young pig is skewered on a long spit and roasted slowly over embers for hours, basted until the skin crackles. Vendors carve it to order and serve it with cornbread, sour cabbage, and beans at festival stalls in Western Serbia's Dragačevo district.
