Durban Samoosas

Durban has the largest concentration of people of Indian descent of any city outside India, which is a big reason samoosas here taste noticeably different from their Indian originals.
Crispy triangular pastries stuffed with spiced mince, chicken, fish or spiced potato and fried to order. They're sold from petrol-station counters, market stalls and dedicated 'samoosa shops' across the city, folded and filled fresh throughout the day.
Why it's made this way: Indian indentured labourers brought the samosa to Natal's sugar plantations from the 1860s onward; isolated from India for decades under apartheid, Durban's Indian community developed its own distinct spicing and street-vendor culture around it.
