Some vendors take the sweet-and-heat pairing even further, hollowing out red chili peppers and stuffing them with the mashed banana mixture before serving.

Mukhbaza is very ripe bananas mashed together with honey and sometimes breadcrumbs, then finished with a jolt of chili or black pepper. The result is a dessert that plays sweet against spicy in a single bite — unusual even by Sudan's varied dessert standards.

Why it's made this way: Eastern Sudan sits at a crossroads of Red Sea and Arabian Peninsula trade, and mukhbaza's sweet-spice combination echoes food traditions found across that trade route, adapted here around the region's own banana orchards and wild honey.
