The word mullah simply means 'stew' in Sudanese Arabic — so a menu offering 'mullah' alone is really just promising a rich, red, tomato-based gravy built around whatever meat and spice the cook has on hand.

Mullah ahmar is a red mincemeat-and-tomato sauce simmered with onion and warming spices until thick, then ladled generously over asida or scooped up with torn gurasa. It's one of the most common everyday mullahs eaten across greater Khartoum and Omdurman households.

Why it's made this way: As the default gravy of the Sudanese table, mullah ahmar shows how a handful of pantry staples — tomato paste, onion, dried spice — get stretched into a full, nourishing meal night after night.
