Waika is made by sun-drying whole okra pods for days until they turn brittle and near-black, then grinding them into a powder that thickens stews without any of fresh okra's sliminess.

Mullah waika is a dark, earthy stew built on powdered dried okra, simmered with meat, onion, and tomato until it turns glossy and thick. The dried okra gives the sauce a deep, slightly smoky flavor quite different from fresh-okra bamia stews.

Why it's made this way: Drying okra was a practical solution long before refrigeration — a way to preserve a rainy-season vegetable for use year-round — and waika remains one of the clearest surviving techniques of that older Sudanese pantry culture.
