Red Sea shrimp caught off Port Sudan's coast are exported as far as the Gulf states, but the biggest and freshest catch never leaves the city's own grills.

Shrimp pulled from the Red Sea shallows are threaded onto skewers, marinated in garlic, lemon, and a Sudanese spice blend, then grilled quickly over hot coals until just pink. They're a favorite quick bite at Port Sudan's harborfront stalls in the cooler evening hours.

Why it's made this way: The Red Sea's coral reefs support some of the richest shellfish grounds on Sudan's coast, and grilling them simply — letting the char and spice do the work — is the local way of showcasing that abundance.
