Its home event, Bern's Zibelemärit onion market, is wrapped in a legend about a 1405 fire and a grateful gift of onion-selling rights — a story the city's own contemporary chronicles never actually mention.

A yeasted or shortcrust base is topped with a rich custard of slow-cooked onion, egg, and cream, sometimes with bacon or caraway, and baked until set and golden. Street stalls at Bern's annual Zibelemärit and other autumn markets sell it warm by the slice.

Why it's made this way: Whatever its exact origin, the tart became permanently tied to Bern's onion-selling tradition, still marked every November with a market that draws onion braids strung with dried flowers and jokes.
