The name comes from the tiny natural carbon-dioxide 'pearls' that form in the glass — a light spritz unique to Chasselas grown around Lake Geneva.
Perlan is the traditional Geneva name for a light, dry white wine made from the Chasselas grape, with delicate floral notes and a faint sparkle on the tongue. It's the everyday table wine of the canton, served cold with perch fillets from the lake or a plate of local cheese.
Why it's made this way: The name is specific to the Mandement district of the canton of Geneva, where Chasselas has been the dominant grape for generations, distinguishing it from the same grape called 'Dorin' just next door in Vaud.
